A Sautéed Mushroom and Broccoli Stir-Fry is a healthy, quick, and flavorful dish that makes for a great side or even a light main course. The earthy mushrooms pair perfectly with the crisp-tender broccoli, and the savory sauce ties everything together. This stir-fry is simple, packed with nutrients, and can be easily customized to your liking. Here’s a delicious recipe to try!

Sautéed Mushroom and Broccoli Stir-Fry

Ingredients:

  • 2 cups broccoli florets (about 1 medium head of broccoli)
  • 2 tablespoons olive oil (or sesame oil for extra flavor)
  • 1/2 lb (225g) mushrooms, sliced (button mushrooms, cremini, or shiitake work great)
  • 2-3 cloves garlic, minced
  • 1 small onion, thinly sliced (optional)
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 tablespoon oyster sauce (or vegetarian oyster sauce for a plant-based option)
  • 1 teaspoon sesame oil (optional, for extra flavor)
  • 1 teaspoon honey or maple syrup (optional, for a hint of sweetness)
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
  • 1 tablespoon sesame seeds (optional, for garnish)
  • Fresh cilantro or green onions for garnish (optional)

Instructions:

  1. Blanch the Broccoli:

    • Bring a pot of salted water to a boil. Add the broccoli florets and blanch them for about 2 minutes until they’re bright green and tender-crisp. Drain and immediately transfer the broccoli to a bowl of ice water to stop the cooking process. This helps keep the broccoli crisp and vibrant.
    • Once cooled, drain well and set aside.
  2. Sauté the Mushrooms:

    • In a large skillet or wok, heat the olive oil (or sesame oil) over medium-high heat.
    • Add the sliced mushrooms and sauté for 5-7 minutes until they release their moisture and become golden brown. Stir occasionally to ensure even cooking.
    • Add the sliced onion (if using) and garlic, and cook for another 1-2 minutes until fragrant and softened.
  3. Add the Sauces:

    • Stir in the soy sauce, oyster sauce, sesame oil, and honey (if using). Toss the mushrooms and onions to coat them in the sauce, and cook for an additional 1-2 minutes until everything is well combined.
  4. Add the Broccoli:

    • Add the blanched broccoli to the pan and toss gently to combine. Cook for another 2-3 minutes, just enough to heat through and allow the broccoli to absorb some of the sauce. Season with freshly ground black pepper and red pepper flakes (if using).
  5. Garnish and Serve:

    • Remove from heat and transfer the stir-fry to a serving dish. Garnish with sesame seeds and fresh cilantro or sliced green onions for an added burst of flavor.
    • Serve immediately as a side dish, or pair it with rice, quinoa, or noodles for a light main course.

Tips for the Perfect Stir-Fry:

  • Customize the veggies: Feel free to add other vegetables like bell peppers, carrots, or snow peas for added color and texture.
  • For extra flavor: Add a splash of rice vinegar or a squeeze of lemon juice at the end for a little tang.
  • Protein boost: Add tofu, tempeh, or cooked chicken to make the stir-fry a more complete meal.
  • Soy-free option: If you need a soy-free option, you can use coconut aminos in place of soy sauce.

Why You’ll Love This Stir-Fry:

  • Quick and easy: This stir-fry comes together in about 15-20 minutes, making it perfect for a weeknight meal.
  • Nutrient-packed: Broccoli is full of fiber and vitamins, while mushrooms provide antioxidants and are a great source of umami flavor.
  • Versatile: You can easily modify this recipe to fit your dietary preferences or what you have on hand.

This Sautéed Mushroom and Broccoli Stir-Fry is an easy and delicious dish that’s perfect as a side or light meal. It’s savory, satisfying, and packed with fresh flavors. Enjoy! Let me know how it turns out!
