A Sautéed Mushroom and Broccoli Stir-Fry is a quick, healthy, and delicious dish that’s perfect for a light meal or as a side. Here’s a simple recipe to make it:

Ingredients:

  • 1 tablespoon olive oil (or vegetable oil)
  • 1 medium onion, thinly sliced
  • 2 cloves garlic, minced
  • 8 oz mushrooms, sliced (button mushrooms, cremini, or any variety you prefer)
  • 2 cups broccoli florets
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon sesame oil
  • 1 teaspoon rice vinegar (optional for tang)
  • 1/2 teaspoon crushed red pepper flakes (optional, for heat)
  • Salt and pepper, to taste
  • 1 tablespoon sesame seeds (optional, for garnish)
  • 1/4 cup water or vegetable broth (for steaming the broccoli)

Instructions:

1. Prepare the Vegetables:

  • Wash and slice the mushrooms, and cut the broccoli into bite-sized florets.
  • Slice the onion and mince the garlic.

2. Sauté the Onions and Garlic:

  • Heat the olive oil in a large skillet or wok over medium heat.
  • Add the sliced onion and sauté for about 3-4 minutes, until softened and slightly translucent.
  • Add the minced garlic and cook for another 1 minute, until fragrant.

3. Cook the Mushrooms:

  • Add the sliced mushrooms to the skillet with the onions and garlic. Cook for about 5-6 minutes, stirring occasionally, until the mushrooms release their moisture and become golden brown.

4. Steam the Broccoli:

  • Add the broccoli florets to the pan and stir everything together.
  • Pour in 1/4 cup of water or vegetable broth to help steam the broccoli. Cover the pan with a lid and cook for about 4-5 minutes, until the broccoli is tender but still vibrant and slightly crisp.

5. Season:

  • Stir in the soy sauce, sesame oil, and rice vinegar (if using). Add crushed red pepper flakes for some heat, and season with salt and pepper to taste. Stir well to combine all the flavors.

6. Garnish and Serve:

  • Once the broccoli is tender and everything is well-coated, remove the skillet from heat.
  • If desired, sprinkle sesame seeds over the top for added crunch and flavor.

7. Serve:

  • Serve your sautéed mushroom and broccoli stir-fry as a standalone dish or alongside rice, noodles, or as a side to your main course.

Tips:

  • For added protein, you can incorporate tofu, chicken, or shrimp into this stir-fry.
  • You can also add other vegetables, such as bell peppers, carrots, or snow peas, for extra color and variety.
  • To make it gluten-free, ensure you’re using tamari instead of soy sauce.
