Sausage, Eggs, Chips, and Beans is a hearty and comforting meal, often enjoyed as a classic breakfast or brunch, but it can certainly work for any time of the day! It’s a delicious combination of savory sausages, perfectly cooked eggs, crispy chips (fries), and baked beans—simple yet filling.

Here’s a simple recipe to make this classic meal at home:

Sausage, Eggs, Chips, and Beans

Ingredients:

  • 4 sausages (your choice of pork, chicken, or vegetarian sausages)

  • 4 large eggs

  • 4 medium potatoes (for chips, or use frozen chips if you prefer convenience)

  • 1 can of baked beans (around 400g or 14 oz)

  • Salt and pepper, to taste

  • 1-2 tbsp olive oil (or vegetable oil, for frying)

  • Fresh herbs (optional, for garnish)

  • Ketchup or brown sauce (optional, for serving)

Instructions:

1. Cook the Sausages:
  • Heat a pan or skillet over medium heat. Add the sausages and cook them, turning occasionally, for about 12-15 minutes or until they are golden brown and cooked through. You can also grill them if you prefer.

  • Once cooked, remove them from the pan and set aside, keeping them warm.

2. Prepare the Chips (Fries):
  • Option 1: Homemade Chips:

    • Peel the potatoes and cut them into thick strips (or wedges if you prefer). Rinse them under cold water to remove excess starch.

    • Heat a large pot of salted water to a boil. Add the potato strips and boil for 5-7 minutes. Drain well and pat dry with a towel.

    • Heat 1-2 tbsp of oil in a large frying pan or deep fryer. Fry the potato strips in batches for 5-7 minutes or until golden and crispy. Drain on a paper towel and season with a pinch of salt.

  • Option 2: Frozen Chips:

    • If you’re using frozen chips (fries), follow the instructions on the package, typically frying or baking them for about 15-20 minutes until crispy.

3. Cook the Eggs:
  • While the sausages and chips are cooking, you can prepare the eggs. Heat a non-stick pan over medium-low heat and add a little butter or oil.

  • Crack the eggs into the pan and cook them to your liking—sunny side up, over-easy, or scrambled. If you prefer scrambled eggs, whisk them first and cook gently, stirring occasionally, until fluffy.

  • Season the eggs with salt and pepper.

4. Heat the Beans:
  • Open the can of baked beans and pour them into a small saucepan. Heat over low-medium heat for 3-5 minutes, stirring occasionally until warmed through.

5. Assemble the Plate:
  • Once everything is cooked, place the sausages, eggs, chips, and baked beans onto plates.

  • Garnish with fresh herbs like parsley or chives if desired, and serve with ketchup or brown sauce on the side.

Tips:

  • Make it spicy: Add a dash of hot sauce to your beans for a little kick or sprinkle some chili flakes over the eggs.

  • Vary the sausages: You can use different types of sausages like pork, chicken, turkey, or vegetarian sausages depending on your preferences.

  • Add vegetables: For a more balanced plate, you can add grilled tomatoes, sautéed mushrooms, or spinach.

How to Serve:

  • Serve the dish hot, either on its own or with a side of toast or buttered bread if you like.

  • Enjoy it with a cup of tea or coffee for a traditional breakfast vibe, or a refreshing juice if you prefer something lighter.
