Sausage and Potato Casserole
Ingredients:
- 1 lb sausage (breakfast sausage or Italian sausage works well)
- 4-5 medium potatoes, peeled and diced (Russet or Yukon Gold)
- 1 medium onion, diced
- 2 cloves garlic, minced
- 1 cup shredded cheese (cheddar, mozzarella, or a mix)
- 1 cup heavy cream (or milk for a lighter version)
- 1 tsp dried thyme
- 1 tsp paprika
- Salt and pepper to taste
- 2 tbsp olive oil (for cooking the sausage)
