Here’s a hearty and delicious Sausage and Potato Casserole recipe that’s perfect for a cozy dinner or a potluck. It’s simple, filling, and packed with flavor!

Sausage and Potato Casserole

Ingredients:

  • 1 lb sausage (breakfast sausage or Italian sausage works well)
  • 4-5 medium potatoes, peeled and diced (Russet or Yukon Gold)
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 cup shredded cheese (cheddar, mozzarella, or a mix)
  • 1 cup heavy cream (or milk for a lighter version)
  • 1 tsp dried thyme
  • 1 tsp paprika
  • Salt and pepper to taste
  • 2 tbsp olive oil (for cooking the sausage)
  • 1/2 cup breadcrumbs (optional, for topping)
  • Fresh parsley (optional, for garnish)

Instructions:

  1. Preheat the oven to 375°F (190°C).

  2. Prepare the potatoes: Peel and dice the potatoes into bite-sized cubes. In a large pot, bring water to a boil, add a pinch of salt, and cook the potatoes for 8-10 minutes, or until they are just tender (not fully cooked). Drain and set aside.

  3. Cook the sausage: In a large skillet, heat the olive oil over medium-high heat. Add the sausage, breaking it up with a spoon as it cooks. Cook until browned and fully cooked through, about 6-8 minutes. Add the diced onion and garlic, and cook for another 2-3 minutes until softened and fragrant.

  4. Mix the casserole: In a large mixing bowl, combine the cooked sausage and onion mixture with the drained, partially cooked potatoes. Stir in the thyme, paprika, salt, and pepper. Add the heavy cream and mix everything together well.

  5. Assemble the casserole: Transfer the sausage and potato mixture to a greased 9×13-inch baking dish. Spread it out evenly and top with shredded cheese.

  6. Add the breadcrumb topping (optional): If you like a crispy topping, sprinkle the breadcrumbs evenly over the cheese layer.

  7. Bake: Place the casserole in the preheated oven and bake for 20-25 minutes, or until the cheese is melted and bubbly, and the top is golden brown. If you used breadcrumbs, they should be crispy.

  8. Garnish and serve: Let the casserole cool for 5 minutes before serving. Garnish with fresh parsley if desired.

Tips:

  • You can use a variety of sausages for different flavors: spicy Italian sausage for heat, breakfast sausage for a milder flavor, or even turkey sausage for a lighter version.
  • Add veggies like bell peppers, mushrooms, or spinach for some extra color and nutrition.
  • If you prefer a creamy sauce, mix in some sour cream or cream cheese with the heavy cream.
