🍅 Grandma Mari’s Garden-Fresh Salsa

🌿 Ingredients:

  • 5 ripe Roma tomatoes, chopped

  • 1 small white onion, finely diced

  • 2 cloves garlic, minced

  • 1–2 jalapeños, chopped (remove seeds for less heat)

  • ½ cup fresh cilantro, chopped

  • Juice of 1 lime

  • Salt to taste (about ½ tsp)

  • Optional: 1 small serrano pepper for added heat

  1. Roast for Flavor (Optional but Delicious):

    • For a richer taste, roast the tomatoes, garlic, onion, and peppers under the broiler for 5–7 minutes, or until charred. Then cool slightly.

  2. Chop or Blend:

    • For chunky salsa, mix everything by hand.

    • For smooth salsa, blend all ingredients in a food processor or blender until desired consistency.

  3. Taste and Adjust:

    • Add more lime juice, salt, or a pinch of sugar if needed to balance acidity.

    • Let it rest in the fridge for 30 minutes for flavors to meld.

  4. Serve:

    • Spoon into a bowl, sprinkle with fresh cilantro, and serve with warm tortilla chips or over tacos.

  • Add ½ a ripe avocado, mashed in at the end for creaminess.
