🥐 Rotel Beef & Cheese Crescents

📝 Ingredients (Makes 8 crescents)

  • 1 can (8 oz) refrigerated crescent roll dough

  • 1/2 lb ground beef

  • 1/2 cup Rotel tomatoes (drained — use original or spicy!)

  • 1/2 cup shredded cheddar cheese (or pepper jack for spice)

  • 1/4 tsp garlic powder

  • 1/4 tsp onion powder

  • Salt & pepper, to taste

  • Optional: chopped green onions or jalapeños for topping


🔥 Instructions

1. Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.

2. Cook the beef:

  • In a skillet over medium heat, cook ground beef until browned.

  • Drain excess grease.

  • Stir in Rotel, garlic powder, onion powder, salt, and pepper.

  • Simmer for 2–3 minutes until most liquid is cooked off.

  • Let cool slightly before assembling.

3. Assemble crescents:

  • Unroll crescent dough and separate into 8 triangles.

  • Spoon about 1–2 tablespoons of the beef mixture onto the wide end of each triangle.

  • Sprinkle shredded cheese on top.

  • Roll up tightly, tucking in the sides a bit to help contain the filling.

4. Bake:

  • Place on prepared baking sheet.

  • Bake for 12–14 minutes, or until golden brown and crisp.

5. Serve warm:

  • Garnish with green onions or jalapeños if desired.

  • Serve with sour cream, salsa, or queso for dipping.
