Rolled Taquitos Fresh Salsa and Guacamole

Here’s a full Rolled Taquitos with Fresh Salsa & Guacamole recipe set — perfect for a party platter, appetizer, or fun dinner night!


🌮 Rolled Taquitos (Crispy Chicken or Beef)

Ingredients (Taquitos):

  • 2 cups shredded cooked chicken or ground beef

  • 1/2 cup shredded cheese (cheddar, Monterey Jack, or a blend)

  • 1/4 cup diced onions (optional)

  • 1 tsp cumin

  • 1 tsp chili powder

  • 1/2 tsp garlic powder

  • Salt and pepper to taste

  • 10–12 small corn tortillas

  • Oil for frying or brushing if baking

Instructions:

  1. Warm Tortillas:
    Microwave tortillas for 30 seconds wrapped in a damp towel to make them pliable.

  2. Mix Filling:
    In a bowl, mix meat, cheese, onions, and seasonings.

  3. Roll the Taquitos:

    • Spoon 2 tbsp of filling near one edge of each tortilla.

    • Roll tightly and secure with a toothpick if needed.

  4. Cook:

    • Frying: Heat 1/2 inch of oil in a pan over medium-high heat. Fry taquitos 2–3 minutes per side until golden and crispy.

    • Baking: Preheat oven to 425°F (220°C), place taquitos seam-side down on a baking sheet, brush with oil, and bake 15–20 minutes until crispy.

    • Air Fryer: 375°F (190°C) for 8–10 minutes, flipping halfway.


🍅 Fresh Salsa (Pico de Gallo Style)

Ingredients:

  • 4 ripe tomatoes, diced

  • 1/4 red onion, finely chopped

  • 1–2 jalapeños, finely diced (seeded for less heat)

  • 1/4 cup chopped fresh cilantro

  • Juice of 1 lime

  • Salt to taste

Instructions:

  1. Combine all ingredients in a bowl.

  2. Let sit for 10–15 minutes so flavors meld.

  3. Taste and adjust lime or salt as needed.


🥑 Simple Guacamole

Ingredients:

  • 3 ripe avocados

  • 1 small tomato, finely chopped

  • 1/4 red onion, finely chopped

  • 1 clove garlic, minced (optional)

  • Juice of 1 lime

  • 2 tbsp chopped cilantro

  • Salt to taste

Instructions:

  1. In a bowl, mash the avocados.

  2. Stir in tomato, onion, garlic, lime juice, and cilantro.

  3. Season with salt and serve immediately.


🧁 Optional Add-ons:

  • Sour cream or Mexican crema

  • Queso fresco

  • Hot sauce

  • Shredded lettuce or cabbage for crunch
