Here’s a delicious and simple recipe for Roasted Green Beans and Potatoes with Bacon — a savory side dish (or full meal!) that combines crispy bacon, tender potatoes, and perfectly roasted green beans. It’s comforting, easy to make, and full of flavor.


🥔🥓 Roasted Green Beans and Potatoes with Bacon

Ingredients (Serves 4–6)

  • 1 lb baby potatoes (red or Yukon gold), halved or quartered

  • ¾ lb fresh green beans, trimmed

  • 6–8 slices thick-cut bacon

  • 2 tablespoons olive oil

  • 1 teaspoon garlic powder

  • ½ teaspoon smoked paprika (optional, for a smoky flavor)

  • Salt and freshly ground black pepper, to taste

  • Optional: 1 tablespoon balsamic vinegar or lemon juice (for brightness at the end)


🔥 Instructions

  1. Preheat oven to 400°F (200°C).

  2. Prepare the bacon:

    • Line a baking sheet with foil or parchment for easy cleanup.

    • Cut bacon into 1-inch pieces.

    • Place on the sheet and bake for 10–12 minutes until starting to crisp but not fully cooked.

    • Remove bacon and set aside. Reserve 1–2 tablespoons of bacon grease on the pan.

  3. Toss the vegetables:

    • In a large bowl, toss potatoes and green beans with olive oil, garlic powder, paprika (if using), salt, and pepper.

    • Add the bacon pieces and toss again.

  4. Roast:

    • Spread everything evenly on the baking sheet (use two pans if crowded).

    • Roast for 25–30 minutes, flipping once halfway through, until potatoes are golden and tender and green beans are slightly crisped.

  5. Optional finishing touch:

    • Drizzle with a little balsamic vinegar or lemon juice for extra brightness.

  6. Serve hot as a side or even a full meal with fried eggs, grilled chicken, or sausage.
