Ingredients:

2 lbs (about 900g) baby potatoes or Yukon Gold, halved or quartered

4–5 cloves garlic, minced (or more if you’re a garlic lover)

2–3 tbsp olive oil

1 ½ tsp salt

½ tsp black pepper

1–2 tsp fresh thyme leaves (or ½ tsp dried thyme)

Instructions:

Preheat oven:

Set to 425°F (220°C). Line a baking sheet with parchment paper or foil for easier cleanup.

Prep potatoes:

Wash and cut potatoes into evenly sized pieces (bite-sized).

In a large bowl, toss potatoes with olive oil, minced garlic, thyme, salt, and pepper.

Roast:

Spread potatoes out in a single layer on the baking sheet (cut side down for extra crispiness).

Roast for 25–35 minutes, flipping once halfway through, until golden brown and crispy on the edges.
