🧾 Ingredients (Serves 4–6)

  • 2 medium cucumbers, thinly sliced (peeled or unpeeled)

  • 3–4 medium tomatoes, chopped or sliced (Roma or cherry tomatoes work well)

  • Β½ red onion, thinly sliced

  • ΒΌ cup white vinegar (or apple cider vinegar)

  • 2 tbsp olive oil

  • 1 tsp sugar

  • Β½ tsp salt (or to taste)

  • ΒΌ tsp black pepper

  • 1–2 tbsp fresh herbs (optional β€” dill, parsley, or basil)

  1. Prep the veggies:

    • Slice cucumbers and onions thin (use a mandoline if you like).

    • Chop tomatoes into bite-size pieces (or halve cherry tomatoes).

  2. Mix the dressing:

    • In a small bowl or jar, whisk together vinegar, olive oil, sugar, salt, and pepper until well combined.

  3. Combine & marinate:

    • In a large bowl, combine the cucumbers, tomatoes, and onions.

    • Pour the dressing over the vegetables and toss well.

    • Cover and refrigerate for at least 30 minutes, preferably 2–3 hours, to let flavors meld.

  4. Serve:

    • Toss again before serving.

    • Sprinkle with chopped fresh herbs if using.
