❤️ Red Velvet Cake

🧾 Ingredients:
For the Cake:

2 ½ cups (315 g) all-purpose flour

1 ½ cups (300 g) granulated sugar

1 tsp baking soda

1 tsp salt

1 tbsp cocoa powder (unsweetened)

1 ½ cups (360 ml) vegetable oil

1 cup (240 ml) buttermilk, room temp

2 large eggs, room temp

2 tbsp red food coloring (liquid or gel)

1 tsp white vinegar
-
2 tsp vanilla extract
For the Cream Cheese Frosting:

225 g (8 oz) cream cheese, softened

115 g (½ cup) unsalted butter, softened

3–3½ cups (360–420 g) powdered sugar, sifted

1 tsp vanilla extract

Pinch of salt
🔥 Instructions:
1. Preheat Oven & Prep Pans

Preheat to 175°C (350°F).

Grease and flour two 8-inch (20 cm) round cake pans. Line bottoms with parchment paper for easy release.
2. Mix the Dry Ingredients

In a medium bowl, sift together flour, sugar, baking soda, salt, and cocoa powder.
3. Mix the Wet Ingredients

In a large bowl, whisk oil, buttermilk, eggs, food coloring, vinegar, and vanilla until well combined.
4. Combine

Add the dry ingredients to the wet in batches, mixing until just smooth (do not overmix).
5. Bake

Divide batter evenly between the two pans.

Bake for 30–35 minutes, or until a toothpick inserted in the center comes out clean.

Let cakes cool in pans 10 mins, then turn out onto a wire rack to cool completely.
🧁 Make the Frosting:

Beat cream cheese and butter until smooth and fluffy.

Add vanilla and salt.

Gradually beat in powdered sugar until desired sweetness and consistency.
🎂 Assemble the Cake:

Level cakes if needed. Place one layer on a serving plate.

Spread frosting over the top, add second layer, then frost the top and sides.

Optional: Crumble cake trimmings for decoration, or garnish with berries or edible flowers.
