Recipe for Baked Chicken Taquitos

Here’s a delicious and healthier Baked Chicken Taquitos recipe — crispy on the outside, creamy and flavorful inside. Perfect for a snack, appetizer, or a fun dinner!


🌮 Baked Chicken Taquitos

🍽️ Servings: 12 taquitos

⏰ Time: 35 minutes (15 prep + 20 bake)


📝 Ingredients:

  • 2 cups cooked, shredded chicken (rotisserie chicken works great)

  • 4 oz (115g) cream cheese, softened

  • 1 cup shredded cheese (cheddar, pepper jack, or a mix)

  • 1–2 tablespoons sour cream or Greek yogurt (optional, for creaminess)

  • 1 teaspoon garlic powder

  • 1 teaspoon onion powder

  • ½ teaspoon ground cumin

  • ½ teaspoon chili powder

  • Salt and pepper, to taste

  • 2 tablespoons chopped green onions or cilantro (optional)

  • 12 small corn or flour tortillas

  • Cooking spray or oil brush for baking


🔥 Instructions:

1. Preheat Oven:

Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper or lightly grease it.


2. Make the Filling:

In a mixing bowl, combine:

  • Shredded chicken

  • Cream cheese

  • Shredded cheese

  • Sour cream (if using)

  • Spices (garlic powder, onion powder, cumin, chili powder)

  • Salt and pepper

  • Green onions or cilantro

Mix until creamy and evenly combined.


3. Warm the Tortillas:

Wrap tortillas in a damp paper towel and microwave for 30 seconds to soften (prevents cracking while rolling).


4. Fill & Roll:

  • Place ~2 tablespoons of filling near one edge of a tortilla.

  • Roll it up tightly like a cigar.

  • Place seam-side down on the prepared baking sheet.


5. Bake:

  • Lightly spray or brush the tops of taquitos with oil.

  • Bake for 18–22 minutes, or until golden brown and crispy.


🥑 Serving Ideas:

Serve hot with:

  • Guacamole or avocado slices

  • Sour cream or Greek yogurt

  • Salsa or pico de gallo

  • Jalapeño-lime dipping sauce


🔁 Variations:

  • Add black beans or corn to the filling.

  • Use pulled pork or ground beef instead of chicken.

  • Add chopped spinach or sautéed peppers for extra veggies.
