Quick Shrimp Scampi Recipe

Here’s a fast and flavorful recipe for Shrimp Scampi — ready in 20 minutes or less! Perfect for a weeknight dinner but fancy enough to impress.


🍤 Quick Shrimp Scampi

🕐 Ready in: 15–20 minutes

Serves: 2–4


📝 Ingredients:

  • 1 lb (450 g) large shrimp, peeled and deveined

  • 3 tbsp butter

  • 2 tbsp olive oil

  • 4 cloves garlic, minced

  • 1/4 tsp red pepper flakes (optional)

  • 1/4 cup dry white wine (or chicken broth)

  • Juice of 1 lemon (about 2 tbsp)

  • Zest of 1 lemon (optional, but brightens the flavor)

  • Salt and black pepper to taste

  • 2 tbsp fresh parsley, chopped

  • 8 oz angel hair or linguine, cooked (optional, if serving with pasta)


👩‍🍳 Instructions:

  1. Cook the Pasta (if using):
    Bring salted water to a boil and cook pasta until al dente. Drain and reserve a little pasta water.

  2. Sauté the Shrimp:

    • In a large skillet, heat 1 tbsp olive oil + 1 tbsp butter over medium-high heat.

    • Add shrimp in a single layer. Season with salt and pepper.

    • Cook 1–2 minutes per side until just pink and opaque. Remove and set aside.

  3. Make the Scampi Sauce:

    • In the same pan, add remaining butter and oil.

    • Add garlic and red pepper flakes. Sauté 30–60 seconds until fragrant (don’t brown the garlic).

    • Add white wine and let it simmer for 1–2 minutes to reduce slightly.

    • Stir in lemon juice and zest. Taste and adjust salt.

  4. Bring It Together:

    • Return shrimp to the pan and toss to coat.

    • If using pasta, add it now with a splash of pasta water. Toss everything to combine.

  5. Garnish and Serve:

    • Sprinkle with fresh parsley.

    • Serve immediately with lemon wedges and crusty bread or over pasta.


🍽️ Variations:

  • Use zucchini noodles or cauliflower rice for a low-carb option.

  • Add a handful of spinach or cherry tomatoes for extra color.

  • Swap white wine for vermouth, chicken broth, or clam juice.
