Here’s a super simple, crowd-pleasing recipe for Queso Fundido – a warm, gooey Mexican cheese dip that’s typically served with tortillas or chips. It’s rich, melty, and perfect for game days, parties, or indulgent snacks.


🧀 Queso Fundido (Mexican Melted Cheese Dip)

🕒 Ready in: 20 minutes

🍽️ Serves: 4–6 as an appetizer


🛒 Ingredients:

  • 1 tbsp oil or butter

  • ½ lb (225g) chorizo, casing removed (or try spicy sausage)

  • 1 small onion, finely chopped (optional)

  • 1–2 cloves garlic, minced (optional)

  • 2 cups shredded Oaxaca, Monterey Jack, or Mozzarella cheese

  • 1 cup shredded sharp cheddar (for flavor balance)

  • Optional: sliced jalapeños or roasted poblanos

  • Warm tortillas or tortilla chips, for serving


🔪 Instructions:

1. Preheat oven to 400°F (200°C)

2. Cook the Chorizo:

  • Heat oil in an oven-safe skillet (like cast iron).

  • Add chorizo and cook over medium heat until browned and fully cooked, breaking it up as it cooks (5–7 minutes).

  • Optional: Add onion and garlic, and sauté until soft (about 3 minutes).

3. Assemble the Cheese:

  • Turn off the heat.

  • Spread the cooked chorizo evenly in the pan or transfer to a baking dish.

  • Sprinkle both cheeses evenly over the top.

  • Add any extras like jalapeños or poblanos now.

4. Bake or Broil:

  • Place in the oven and bake for 8–10 minutes, or until the cheese is completely melted and bubbling.

  • Alternatively, broil for 3–4 minutes for a golden top—just watch closely so it doesn’t burn.

5. Serve Immediately:

  • Stir gently before serving if you want to mix the chorizo and cheese.

  • Serve hot with warm tortillas or tortilla chips.


🌶️ Optional Add-Ins:

  • Mushrooms sautéed with garlic (for a vegetarian version)

  • Poblano strips or caramelized onions

  • A drizzle of hot sauce or sprinkle of fresh cilantro

  • Best enjoyed right away while it’s hot and melty—queso fundido sets up as it cools.

  • Reheat gently in the oven or microwave with a splash of milk or cream.
