Queso Fundido

Queso Fundido is a delicious, melty Mexican cheese dip that’s typically served hot and bubbling, often with chorizo, roasted peppers, or mushrooms on top. It’s usually eaten with warm tortillas or tortilla chips. Here’s a classic recipe for it:


🌶️ Queso Fundido with Chorizo

Ingredients:

  • 8 oz (225 g) Mexican melting cheese (like Oaxaca, Chihuahua, or a mix of mozzarella + Monterey Jack)

  • 4 oz (115 g) Mexican chorizo, casing removed

  • 1 small onion, finely chopped (optional)

  • 1-2 roasted poblano peppers or jalapeños, sliced (optional for extra flavor)

  • Tortillas or tortilla chips, for serving


Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Cook the chorizo: In a skillet over medium heat, cook the chorizo (and onion if using) until browned and cooked through, about 5–7 minutes. Drain excess fat if needed.

  3. Prepare the cheese: Shred or chop your cheese and place it in an oven-safe dish or small cast iron skillet.

  4. Assemble: Top the cheese with the cooked chorizo and any roasted peppers.

  5. Bake: Place in the oven for 10–15 minutes until the cheese is fully melted and bubbly. If you want a browned top, broil for 2–3 minutes at the end.

  6. Serve hot: Stir slightly and scoop into warm tortillas or dip with chips. Best eaten right away while hot and melty.


🔄 Variations:

  • Swap chorizo for mushrooms for a vegetarian version.

  • Add a splash of tequila or beer while cooking chorizo for extra depth.

  • Top with fresh cilantro or pico de gallo before serving.
