🌶️ Queso Fundido with Chorizo
Ingredients:

8 oz (225 g) Mexican melting cheese (like Oaxaca, Chihuahua, or a mix of mozzarella + Monterey Jack)

4 oz (115 g) Mexican chorizo, casing removed

1 small onion, finely chopped (optional)

1-2 roasted poblano peppers or jalapeños, sliced (optional for extra flavor)

Tortillas or tortilla chips, for serving
Instructions:

Preheat oven to 375°F (190°C).

Cook the chorizo: In a skillet over medium heat, cook the chorizo (and onion if using) until browned and cooked through, about 5–7 minutes. Drain excess fat if needed.

Prepare the cheese: Shred or chop your cheese and place it in an oven-safe dish or small cast iron skillet.

Assemble: Top the cheese with the cooked chorizo and any roasted peppers.

Bake: Place in the oven for 10–15 minutes until the cheese is fully melted and bubbly. If you want a browned top, broil for 2–3 minutes at the end.

Serve hot: Stir slightly and scoop into warm tortillas or dip with chips. Best eaten right away while hot and melty.
