Potato Rolls with Bacon

Ingredients:

For the Rolls:

  • 1 1/2 cups mashed potatoes (about 2 medium potatoes)
  • 1/2 cup warm milk (about 110°F/45°C)
  • 1/4 cup sugar
  • 2 tsp active dry yeast
  • 1/2 cup unsalted butter, melted
  • 2 eggs
  • 1 tsp salt
  • 4 to 4 1/2 cups all-purpose flour (you may need to adjust)
  • 1/2 tsp garlic powder (optional, for extra flavor)

For the Bacon:

  • 6 slices of bacon
  • 1 tbsp olive oil (for greasing the rolls)

Instructions:

  1. Cook and mash the potatoes:
    • Peel and dice the potatoes. Boil them in salted water until tender, about 10-12 minutes. Drain and mash the potatoes until smooth. Let them cool to room temperature. You’ll need about 1 1/2 cups of mashed potatoes.
  2. Activate the yeast:
    • In a small bowl, combine the warm milk, sugar, and yeast. Stir and let it sit for about 5 minutes, or until the mixture is bubbly and foamy.
  3. Make the dough:
    • In a large mixing bowl, combine the mashed potatoes, melted butter, eggs, and salt. Add the yeast mixture and mix to combine.
    • Gradually add the flour, 1 cup at a time, mixing with a wooden spoon until the dough comes together. You may need to use your hands towards the end to knead it into a soft dough. The dough should be slightly sticky but not too wet. Add more flour if needed.
  4. Knead the dough:
    • Turn the dough onto a floured surface and knead for about 8-10 minutes, or until smooth and elastic. If you prefer, you can use a stand mixer with a dough hook for this step.
  5. Let the dough rise:
    • Place the dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-1.5 hours, or until it doubles in size.
  6. Prepare the bacon:
    • While the dough is rising, cook the bacon until crispy in a skillet over medium heat. Once cooked, drain on paper towels and crumble the bacon into small pieces.
  7. Shape the rolls:
    • Once the dough has risen, punch it down to release the air. Divide the dough into 12-16 equal portions and shape them into small balls.
    • Lightly grease a 9×13-inch baking pan or a round cake pan with olive oil. Arrange the dough balls in the pan, ensuring they’re close together but not overcrowded. Sprinkle the crumbled bacon evenly over the top of the dough balls.
  8. Second rise:
    • Cover the pan with a towel and let the rolls rise for another 30-45 minutes, or until they’ve puffed up and filled the pan.
  9. Bake:
    • Preheat your oven to 375°F (190°C). Bake the rolls for about 20-25 minutes, or until golden brown on top. The rolls should sound hollow when tapped on the bottom.
  10. Serve:
  • Let the rolls cool slightly before serving. You can brush the tops with a bit of melted butter for extra richness.
