Here’s a simple and delicious recipe for Potato Muffins — soft, savory, and perfect for breakfast, snacks, or as a side dish!


🧁🥔 Easy Savory Potato Muffins

These muffins are made with mashed or grated potatoes, cheese, and herbs. You can customize them with extras like bacon, scallions, or even a touch of spice.


📝 Ingredients:

  • 1 cup mashed potatoes (leftovers work great)

  • 1 cup all-purpose flour

  • 1 tsp baking powder

  • ½ tsp baking soda

  • ½ tsp salt

  • ¼ tsp black pepper

  • 2 eggs

  • ½ cup milk or buttermilk

  • ¼ cup melted butter or oil

  • ½–1 cup shredded cheese (cheddar works best)

  • 2 tbsp chopped fresh chives or scallions

  • (Optional: ¼ cup cooked bacon bits or sautéed onions)


🔥 Instructions:

1. Preheat oven to 375°F (190°C)

Grease a muffin tin or line with paper liners.

2. Mix Dry Ingredients:

In a large bowl, whisk together:

  • Flour

  • Baking powder

  • Baking soda

  • Salt and pepper

3. Mix Wet Ingredients:

In another bowl, mix:

  • Mashed potatoes

  • Eggs

  • Milk

  • Melted butter

4. Combine:

  • Add the wet ingredients to the dry ingredients.

  • Stir until just combined — don’t overmix.

  • Fold in cheese, chives, and any extras like bacon.

5. Fill Muffin Tin:

  • Spoon the batter into each muffin cup (about ¾ full).

6. Bake:

  • Bake for 20–25 minutes, or until golden and a toothpick comes out clean.

7. Cool & Serve:

  • Let cool slightly before removing from the tin.

  • Serve warm with butter or sour cream.


✅ Tips:

  • Use grated raw potatoes instead of mashed for a different texture (squeeze out excess moisture).

  • Add a pinch of chili flakes for some heat.

  • They freeze well — great for meal prep!
