🥔 Potato Loaf with Bacon and Sausage
Ingredients:

4 cups mashed potatoes (about 5–6 medium potatoes)

200g bacon, chopped

200g sausage meat (or remove casing from 2 sausages)

1 small onion, finely chopped
-
2 cloves garlic, minced
-
1 cup shredded cheese (cheddar or mozzarella works well)

2 eggs, beaten
-
1/4 cup breadcrumbs (plus extra for topping)

2 tbsp chopped parsley (optional)

Salt & pepper, to taste

Butter or oil for greasing
Optional Add-ins:

1/4 tsp paprika or chili flakes for heat

1/2 cup frozen peas or corn for added texture
🔪 Instructions:

Preheat oven to 180°C (350°F). Grease a loaf pan and dust lightly with breadcrumbs.

Cook the bacon and sausage:

In a pan over medium heat, cook bacon until crispy. Remove and drain.

In the same pan, cook sausage meat until browned and crumbled. Add chopped onion and garlic, cook until soft.

Mix the loaf:

In a large bowl, combine mashed potatoes, cooked bacon and sausage mixture, cheese, eggs, breadcrumbs, parsley, salt, and pepper.

Mix well until fully combined. The mix should be firm but moist — adjust with a bit more breadcrumbs if too wet.

Assemble:

Spoon mixture into the prepared loaf pan. Press down firmly.

Sprinkle top with extra breadcrumbs and a few small dots of butter for a crispy crust.

Bake:

Bake for 35–45 minutes or until golden brown on top and heated through.

Let cool for 10 minutes before slicing — it sets as it cools.
