  • 4–6 bone-in or boneless pork chops (about 1 inch thick)

  • 2 Tbsp olive oil or butter

  • 1 medium onion, thinly sliced

  • 4–5 medium potatoes, peeled and thinly sliced

  • 1 (10.5 oz) can cream of mushroom soup (or cream of chicken or celery)

  • 1/2 cup milk or heavy cream

  • 1 cup shredded cheddar cheese (optional, but delicious)

  • Paprika, for garnish

  • Fresh parsley, for garnish (optional)

  1. Preheat oven to 350Β°F (175Β°C). Grease a 9×13″ baking dish.

  2. Season the pork chops with salt, pepper, and garlic powder.

  3. Sear the chops: In a skillet over medium-high heat, heat the oil or butter. Brown pork chops on both sides (2–3 minutes per side). Remove and set aside.

  4. Layer the potatoes in the baking dish, then spread sliced onions evenly over the potatoes.

  5. Mix the sauce: In a bowl, combine the cream of mushroom soup and milk. Pour evenly over the potatoes and onions.

  6. Add the pork chops on top of the mixture. Sprinkle shredded cheese over everything if using.

  7. Cover with foil and bake for 45 minutes. Uncover and bake an additional 15–20 minutes, or until the pork chops are cooked through and the potatoes are tender.

  8. Garnish with a sprinkle of paprika and chopped parsley before serving.
