Ingredients:

For the cake:

  • 1 box (15.25 oz) yellow cake mix (or white cake mix)
  • 3 large eggs
  • 1/2 cup vegetable oil
  • 1 cup canned crushed pineapple (with juice)
  • 1 teaspoon vanilla extract

For the coconut cream filling:

  • 1 package (8 oz) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1/2 cup sweetened shredded coconut
  • 1 cup heavy whipping cream

For the frosting:

  • 1 can (8 oz) whipped topping (like Cool Whip)
  • 1/2 cup sweetened shredded coconut
  • 1/2 cup crushed pineapple, drained (optional for topping)

Instructions:

  1. Preheat the oven: Preheat your oven to 350°F (175°C). Grease and flour a 9×13-inch baking dish.
  2. Make the cake:
    • In a large bowl, combine the cake mix, eggs, vegetable oil, crushed pineapple (with juice), and vanilla extract.
    • Mix the ingredients together until well combined. Pour the batter into the prepared 9×13-inch baking dish and spread it evenly.
  3. Bake the cake:
    • Bake according to the package instructions, usually around 30-35 minutes, or until a toothpick inserted in the center comes out clean.
