-
1 tbsp oil or butter
-
1/2 green bell pepper, finely diced
-
1/2 small onion, finely diced
-
Salt and pepper to taste
-
1/2 tsp garlic powder
-
1 cup shredded provolone or mozzarella (or a combo)

Optional: Cheez Whiz (for an authentic twist)
Other:
-
10 egg roll wrappers
-
1 egg (beaten, for sealing)
-
Oil for frying (vegetable or canola)
🔧 Instructions:
1. Cook the filling:
-
In a skillet, heat oil over medium heat.
-
Sauté onions and peppers until soft (about 4–5 minutes).
-
Add sliced beef, garlic powder, salt, and pepper. Cook until beef is just done.
-
Remove from heat, stir in cheese (or set aside cheese to add during rolling for gooier texture).
-
Let the mixture cool slightly.
2. Assemble the egg rolls:
-
Place a wrapper in a diamond shape in front of you.
-
Spoon about 2–3 tablespoons of filling near the bottom third.
-
Fold up the bottom point, then fold in sides, and roll tightly.
-
Seal edge with beaten egg. Repeat for all.
3. Fry until golden:
-
Heat oil to 350°F (175°C) in a deep skillet or fryer.
-
Fry egg rolls in batches, 3–4 minutes per side, until golden and crispy.
-
Drain on paper towels and let cool slightly before serving.
🥣 Dipping Sauce Ideas:
-
Spicy mayo or chipotle aioli
-
Cheese sauce or warm Cheez Whiz
-
Garlic ranch or horseradish dip
🔁 Variations:
-
Use ground beef for a budget version
-
Swap in mushrooms for a meatless take
-
Make it in an air fryer (400°F for ~8–10 min, flipping halfway)
