  • 4 large eggs

  1. Beat the eggs

    • Crack eggs into a bowl. Add milk or cream if using.

    • Whisk gently until yolks and whites are fully combined but not frothy.

  2. Heat the pan

    • Place a non-stick skillet over low to medium-low heat.

    • Add butter and let it melt, coating the pan.

  3. Cook the eggs slowly

    • Pour the eggs into the pan.

    • Let them sit undisturbed for a few seconds until they start to set around the edges.

  4. Gently stir

    • Continue stirring slowly and gently, allowing curds to form.
