🧂 Ingredients

  • 4 large eggs

  • 2 tbsp milk or cream (optional, for extra creaminess)

  • Salt, to taste

  • Freshly ground black pepper, to taste

  • 1 tbsp butter


🔥 Instructions

1. Beat eggs:

  • Crack eggs into a bowl.

  • Add milk or cream if using.

  • Season with a pinch of salt and pepper.

  • Whisk vigorously until fully blended and slightly frothy.

2. Heat the pan:

  • Place a non-stick skillet over medium-low heat.

  • Add butter and let it melt, coating the pan.

3. Cook eggs slowly:

  • Pour eggs into the pan.

  • Let them sit for a few seconds until they start to set at the edges.

  • Using a spatula, gently push the eggs from the edges toward the center.

  • Continue folding and stirring gently, moving slowly to create large soft curds.

4. Remove from heat early:

  • When eggs are mostly set but still slightly runny (they’ll continue cooking off the heat), remove from heat.

5. Serve immediately:

  • Serve hot, with extra seasoning if desired.
