PEPPER STEAK IN A CROCK POT

Here’s a simple and tasty Pepper Steak in a Crock Pot recipe β€” tender beef strips simmered with bell peppers and onions in a savory, slightly tangy sauce. Perfect for a hands-off slow cooker meal!

🧾 Ingredients:

  • 1.5 lbs beef sirloin or flank steak, thinly sliced into strips

  • 3 bell peppers (red, green, yellow), sliced into strips

  • 1 large onion, sliced

  • 3 cloves garlic, minced

  • 1/3 cup beef broth

  • 1/4 cup soy sauce

  • 2 tbsp Worcestershire sauce

  • 2 tbsp brown sugar

  • 1 tbsp cornstarch

  • 1 tbsp water

  • 1 tsp ground black pepper (or more to taste)

  • 1/2 tsp salt

  • 1 tbsp vegetable oil (optional, for browning)

1. Optional β€” brown the beef:

  • Heat oil in a skillet over medium-high heat.

  • Quickly brown the beef strips for 2-3 minutes. (This adds flavor but can be skipped for convenience.)

2. Add ingredients to slow cooker:

  • Place sliced peppers, onions, and garlic at the bottom.

  • Add beef strips on top.

  • In a bowl, whisk together beef broth, soy sauce, Worcestershire sauce, brown sugar, black pepper, and salt.

  • Pour sauce over the beef and vegetables.

3. Cook:

  • Cover and cook on LOW for 6–8 hours or HIGH for 3–4 hours until beef is tender.

4. Thicken the sauce:

  • About 15 minutes before serving, mix cornstarch and water to make a slurry.

  • Stir into the slow cooker, cover, and cook on HIGH for the remaining time to thicken.


🍚 Serve with:

  • Steamed white rice or fried rice

  • Egg noodles

  • Stir-fried vegetables on the side

  • Use flank steak or sirloin for tender results.

  • Add sliced mushrooms or snap peas for extra veggies.

  • Adjust soy sauce and brown sugar to balance salty-sweet flavors.
