🥩🌶️ Crockpot Pepper Steak
Ingredients:
-
2 lbs sirloin steak or flank steak, thinly sliced into strips
-
3 bell peppers (mix of red, green, yellow), sliced into strips
-
1 medium onion, sliced
-
3 cloves garlic, minced
-
½ cup soy sauce
-
¼ cup beef broth
-
2 tbsp brown sugar
-
1 tbsp cornstarch
-
1 tbsp water
-
1 tsp ground black pepper (or to taste)
-
1 tbsp vegetable oil
-
Optional: 1 tsp ginger, minced or powdered
Instructions:
-
Prepare the steak:
Toss the sliced steak with black pepper and garlic. -
Brown the steak (optional but recommended):
Heat vegetable oil in a skillet over medium-high heat. Quickly sear steak strips just until browned (about 1-2 minutes). This step adds flavor but you can skip it if you’re short on time. -
Add ingredients to crockpot:
Place seared steak, sliced bell peppers, and onion into the crockpot. -
Mix sauce:
In a bowl, whisk together soy sauce, beef broth, brown sugar, and ginger (if using). Pour over the steak and veggies. -
Cook:
Cover and cook on LOW for 5–6 hours or HIGH for 2–3 hours, until steak is tender and peppers are cooked but still slightly crisp. -
Thicken sauce:
About 30 minutes before serving, mix cornstarch and water to make a slurry. Stir it into the crockpot to thicken the sauce. Cook uncovered for the remaining time. -
Serve:
Serve hot over steamed rice or noodles.
Tips:
-
Use fresh, colorful bell peppers for a vibrant dish.
-
Add sliced mushrooms or snap peas for extra veggies.
-
Adjust black pepper to get your preferred heat level.
