Peanut Butter Balls

Here’s a classic, no-bake treat that’s rich, creamy, and irresistible: Peanut Butter Balls — also known as Buckeyes when dipped in chocolate. They’re easy to make, freeze beautifully, and are perfect for the holidays or anytime you need a quick sweet fix.


🥜🍫 Peanut Butter Balls (a.k.a. Buckeyes)

📝 Ingredients:

  • 1 1/2 cups creamy peanut butter (not natural style)

  • 1/2 cup (1 stick) unsalted butter, softened

  • 1 tsp vanilla extract

  • 1/4 tsp salt

  • 2–3 cups powdered sugar (start with 2 and adjust to your texture)

  • 2 cups semi-sweet or dark chocolate chips (for coating)

  • 1 tbsp coconut oil or shortening (optional, for smoother chocolate)


🥣 Instructions:

1. Make the Peanut Butter Dough:

  • In a large bowl, beat together peanut butter, butter, vanilla, and salt until smooth and creamy.

  • Gradually mix in powdered sugar, ½ cup at a time, until a thick, moldable dough forms.

  • Chill for 15–20 minutes if dough is too soft to roll.


2. Form the Balls:

  • Roll dough into 1-inch balls and place on a parchment-lined baking sheet.

  • Freeze for 20–30 minutes until firm (this helps with dipping).


3. Dip in Chocolate:

  • Melt chocolate chips (and coconut oil, if using) in the microwave or double boiler until smooth.

  • Using a toothpick or fork, dip each ball into the chocolate — fully or partially for the “buckeye” look.

  • Let excess chocolate drip off, then return to baking sheet.


4. Chill to Set:

  • Refrigerate or freeze the dipped balls until chocolate is firm (about 15–30 minutes).


🍽️ Serving & Storage:

  • Store in an airtight container in the fridge for up to 2 weeks, or freeze for up to 3 months.

  • Serve cold or room temp (slightly softened for best texture).


🔄 Variations:

  • Add crushed graham crackers or rice krispies for crunch.

  • Roll in crushed peanuts, sprinkles, or cocoa powder instead of dipping in chocolate.

  • Use white chocolate, dark chocolate, or even Nutella for coating.
