Peanut Butter Balls

Here’s a classic and irresistible recipe for Peanut Butter Balls—no bake, super easy, and perfect for holidays, parties, or anytime sweet cravings hit!


🥜 Peanut Butter Balls

(Also known as Buckeyes if partially dipped in chocolate!)

Ingredients:

  • 1½ cups creamy peanut butter

  • ½ cup (1 stick) unsalted butter, softened

  • 1 tsp vanilla extract

  • 2–2½ cups powdered sugar (adjust for desired consistency)

  • 2 cups semisweet or milk chocolate chips

  • 1 tbsp shortening or coconut oil (optional, for smoother melting)


Instructions:

  1. Make the peanut butter mixture:

    • In a large bowl, mix together peanut butter, butter, and vanilla until smooth.

    • Gradually add powdered sugar, stirring until a firm dough forms (should be easy to roll into balls without sticking).

  2. Form the balls:

    • Roll into 1-inch balls and place on a parchment-lined baking sheet.

    • Chill in the refrigerator or freezer for 20–30 minutes to firm up.

  3. Melt the chocolate:

    • In a microwave-safe bowl, melt chocolate chips (with shortening or coconut oil if using) in 30-second intervals, stirring in between until smooth.

  4. Dip and coat:

    • Using a fork or toothpick, dip each ball into the melted chocolate.

    • Fully coat or leave the top exposed for a “buckeye” look.

    • Place back on the parchment-lined sheet.

  5. Chill until set:

    • Refrigerate for 30 minutes or until chocolate is firm.


💡 Tips:

  • Add a pinch of salt if your peanut butter is unsalted.

  • Store in the fridge in an airtight container for up to 2 weeks, or freeze for longer storage.

  • For a crunchy version, use crunchy peanut butter or stir in crushed Rice Krispies.
