Here’s a classic, diner-style Patty Melt recipe — crispy toasted bread, juicy beef patty, caramelized onions, and melty cheese all grilled to perfection. It’s basically a burger meets grilled cheese, and it’s so good.


🍔 Classic Patty Melt Recipe

Ingredients (Serves 2):

  • ½ lb ground beef (80/20 is ideal for juiciness)

  • Salt & pepper, to taste

  • 4 slices rye bread (or sourdough/white if preferred)

  • 4 slices cheese (Swiss, American, or cheddar – or mix!)

  • 1 large onion, thinly sliced

  • 2 tbsp butter

  • 1 tbsp oil (for onions)

  • Optional: Thousand Island or spicy mayo for spreading


🔪 Instructions:

🔹 Step 1: Caramelize the onions

  1. Heat 1 tbsp oil and 1 tbsp butter in a skillet over medium-low heat.

  2. Add sliced onions and cook slowly, stirring occasionally, for 20–25 minutes until golden and soft. Set aside.

🔹 Step 2: Make the patties

  1. Form ground beef into 2 thin, wide patties, about the size of your bread slices.

  2. Season both sides with salt and pepper.

  3. In the same skillet, cook patties over medium-high heat for 3–4 minutes per side, until cooked through and browned. Set aside.

🔹 Step 3: Assemble the melts

  1. Butter one side of each slice of bread.

  2. On the unbuttered side of one slice, layer:

    • 1 slice cheese

    • A beef patty

    • Caramelized onions

    • Another slice of cheese

    • Top with the other slice of bread (buttered side out).

🔹 Step 4: Grill the sandwiches

  1. Wipe out the skillet and heat over medium.

  2. Grill each sandwich for 2–3 minutes per side, pressing slightly with a spatula, until the bread is golden and the cheese is melted.


🧀 Tips & Variations:

  • Add a smear of Thousand Island, Dijon, or hot mustard inside for extra flavor.

  • Use gruyère, muenster, or pepper jack for a gourmet spin.

  • Want to level it up? Add a few grilled mushrooms or pickled jalapeños.
