PASTINA soup

Pastina Soup is a simple, comforting Italian dish made with tiny pasta (pastina) and a flavorful broth. It’s often enjoyed when someone is feeling under the weather, but it’s also a cozy meal any time.

⭐ Classic Pastina Soup Recipe

📝 Ingredients:

  • 4 cups chicken broth (or vegetable broth)

  • 1/2 cup pastina (like acini di pepe, stelline, or orzo)

  • 1 tablespoon butter or olive oil

  • 1 egg (optional, for a richer version)

  • 2 tablespoons Parmesan cheese, grated

  • Salt and pepper, to taste

  • Optional: chopped fresh parsley, a squeeze of lemon

🍳 Instructions:

  1. Bring the broth to a boil in a medium pot.

  2. Add the pastina and cook according to package instructions (usually 5–7 minutes), stirring occasionally.

  3. While the pasta is cooking, in a small bowl, beat the egg (if using).

  4. When pastina is tender, reduce the heat to low. Slowly drizzle the beaten egg into the pot while stirring constantly — this creates silky egg ribbons.

  5. Stir in the butter (or olive oil), Parmesan, salt, and pepper.

  6. Serve hot, garnished with parsley and a bit more cheese or a splash of lemon if desired.
