Here’s a fresh and crunchy Pasta Slaw recipe — a fun fusion of pasta salad and coleslaw! It’s creamy, tangy, and perfect for BBQs, potlucks, or a make-ahead summer side.


🥗 Pasta Slaw (Pasta + Coleslaw Fusion Salad)

Ingredients:

  • 8 oz small pasta (elbow macaroni, ditalini, or rotini work well)

  • 3 cups coleslaw mix (pre-shredded cabbage and carrots)

  • ½ cup red bell pepper, finely diced

  • ½ cup celery, thinly sliced (optional)

  • 2 green onions, sliced

  • 2 tbsp fresh parsley or dill (optional)


Dressing:

  • ½ cup mayo

  • ¼ cup sour cream or plain Greek yogurt

  • 2 tbsp apple cider vinegar

  • 1 tbsp Dijon mustard

  • 1 tbsp honey or sugar

  • Salt & black pepper, to taste

  • (Optional): ½ tsp celery seed or poppy seeds for extra flavor


🧑‍🍳 Instructions:

  1. Cook the pasta:

    • Boil in salted water until al dente.

    • Drain and rinse with cold water to stop cooking and chill.

  2. Make the dressing:

    • In a large bowl, whisk together mayo, sour cream, vinegar, mustard, honey, salt, pepper, and any optional seasonings.

  3. Mix the slaw:

    • Add cooled pasta, coleslaw mix, peppers, celery, and green onions to the bowl with dressing.

    • Toss until well coated.

  4. Chill:

    • Cover and refrigerate for at least 1 hour before serving to let flavors meld.

  5. Serve cold, garnished with fresh herbs if desired.


🔄 Variations:

  • Add shredded chicken or bacon for protein.

  • Use broccoli slaw or shaved Brussels sprouts instead of classic slaw mix.

  • Swap mayo for avocado mayo or lighten it up with all Greek yogurt.
