  • 4 medium Yukon Gold or russet potatoes

  • 2–3 tablespoons olive oil or melted butter

  • 1/2 teaspoon paprika (optional, for color)

  • Salt and black pepper, to taste

  • Optional: chopped parsley or chives, for garnish

1. Prep the Potatoes:

  • Preheat oven to 400Β°F (200Β°C).

  • Wash and cut potatoes in half lengthwise (no need to peel).

  • Lightly score the cut side with a crisscross pattern using a sharp knife.

2. Season the Cheese Base:

  • In a small bowl, mix Parmesan, garlic powder, paprika, salt, and pepper.

3. Prepare the Baking Dish:

  • Drizzle olive oil or melted butter into a rimmed baking dish or oven-safe skillet.

  • Sprinkle the Parmesan mixture evenly over the bottom of the dish.

4. Place the Potatoes:

  • Press the cut side of each potato into the cheese mixture in the dish.

  • Arrange them snugly, cut side down.

5. Bake:

6. Cool & Serve:

  • Let rest for 5 minutes before gently lifting the potatoes to preserve the crispy cheese crust.
