Oven-fried stuffed potatoes

Oven-fried stuffed potatoes are a delicious combo of crispy skins and creamy, flavorful fillings. Here’s a solid recipe to get you started:


Oven-Fried Stuffed Potatoes

Ingredients:

  • 4 large russet potatoes

  • 3 tbsp olive oil or melted butter

  • Salt & pepper to taste

  • ½ cup sour cream

  • ½ cup shredded cheddar cheese (plus extra for topping)

  • 3 tbsp milk or cream

  • 2 tbsp chopped green onions (or chives)

  • 2 slices cooked bacon, crumbled (optional)

  • Garlic powder or paprika (optional, for extra flavor)

Instructions:

  1. Preheat oven to 400°F (200°C).

  2. Prep the potatoes:

    • Wash and scrub the potatoes well.

    • Dry them completely.

    • Rub skins with olive oil or butter, sprinkle with salt.

  3. Bake whole potatoes:

    • Place directly on oven rack or on a baking sheet.

    • Bake for 45–60 minutes until tender and skins are crisp.

    • Let cool just enough to handle.

  4. Scoop & mix filling:

    • Cut potatoes in half lengthwise.

    • Scoop out the insides into a bowl, leaving a ¼-inch shell.

    • Mash the potato with sour cream, milk, cheese, green onions, and bacon. Season to taste.

  5. Refill and crisp:

    • Spoon the mixture back into the shells.

    • Sprinkle tops with more cheese or a pinch of paprika if you want extra color.

    • Place them back in the oven at 425°F (220°C) for 15–20 minutes until tops are golden and edges are crisp.

  6. Serve hot with more sour cream, hot sauce, or a sprinkle of herbs if you’re feeling fancy.


Want to add a twist? You can do buffalo chicken, taco meat, broccoli and cheddar, or even a breakfast version with scrambled eggs and sausage.
