One-Pot Chicken Parmesan Pasta

One-Pot Chicken Parmesan Pasta is a great way to enjoy the flavors of Chicken Parmesan without the extra mess or effort of making it in layers. Everything comes together in one pot for a quick and easy meal! Here’s a simple recipe for it:

Ingredients:

  • 2 tbsp olive oil
  • 2 boneless, skinless chicken breasts (cut into bite-sized pieces)
  • Salt and pepper to taste
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) crushed tomatoes
  • 1 ½ cups chicken broth
  • 1 cup heavy cream
  • 12 oz uncooked pasta (such as penne or rotini)
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • ½ tsp red pepper flakes (optional, for heat)
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • Fresh basil (optional, for garnish)

Instructions:

  1. Cook the chicken: Heat the olive oil in a large pot over medium-high heat. Season the chicken pieces with salt and pepper, and add them to the pot. Cook until the chicken is browned on all sides and cooked through (about 6-8 minutes). Remove the chicken from the pot and set it aside.
  2. Sauté garlic: In the same pot, add the minced garlic and sauté for about 30 seconds until fragrant.
  3. Add liquids and seasonings: Pour in the crushed tomatoes, chicken broth, and heavy cream. Stir in the basil, oregano, and red pepper flakes (if using). Bring to a simmer.
  4. Cook the pasta: Add the uncooked pasta to the pot and stir to combine. Cover the pot, reduce the heat to medium, and cook for about 10-12 minutes, or until the pasta is tender and has absorbed most of the liquid. Stir occasionally to prevent the pasta from sticking.
  5. Add cheese: Once the pasta is cooked, stir in the mozzarella and Parmesan cheeses. Add the cooked chicken back into the pot and stir until the cheese is melted and everything is well combined.
  6. Garnish and serve: Top with fresh basil (optional) and serve hot.

This one-pot meal is rich, creamy, and full of those classic Chicken Parmesan flavors—crispy chicken, cheesy goodness, and tangy tomato sauce—all without the hassle of breading and frying the chicken! Plus, cleanup is a breeze with only one pot to wash!
