Main:

  • 4 bone-in, skin-on chicken thighs (or boneless if preferred)

  • 1 lb baby potatoes, halved

  • 8 oz green beans, trimmed

  • 2 tbsp olive oil (plus more as needed)

  • Salt & black pepper, to taste

Garlic Herb Marinade:

  • 3 tbsp olive oil

  • 4 garlic cloves, minced

  • 1 tsp dried thyme

  • 1 tsp dried rosemary

  • 1/2 tsp dried oregano

  • 1/2 tsp paprika

  • Juice of 1/2 lemon

  • Optional: 1 tsp Dijon mustard or 1 tbsp chopped fresh parsley

1. Preheat Oven:

  • Preheat to 400Β°F (200Β°C). Line a large baking sheet or roasting pan with parchment for easier cleanup.

2. Prepare the Marinade:

  • In a small bowl, mix together olive oil, garlic, herbs, paprika, lemon juice, and Dijon (if using).

3. Season the Chicken & Potatoes:

  • Place chicken thighs and halved potatoes in a large bowl or directly on the baking sheet.

  • Drizzle with half of the marinade. Toss everything to coat well.

  • Arrange chicken skin-side up and potatoes cut-side down on the pan.

  • Season generously with salt and pepper.

4. Bake Partway:

  • Roast for 25–30 minutes, until potatoes are starting to brown and chicken is nearly cooked through.

5. Add Green Beans:

  • Toss green beans with remaining marinade and add them to the pan (around the chicken or on top of the potatoes).

  • Roast for another 12–15 minutes, until green beans are tender and chicken skin is crisp.

6. Finish & Serve:

  • Optional: Broil for 2–3 minutes at the end to crisp the chicken skin more.

  • Squeeze fresh lemon over everything and garnish with parsley if desired.
