Here’s a flavorful and easy One-Pan Garlic Herb Chicken with Potatoes & Green Beans recipe — perfect for busy weeknights or simple meal prep. Juicy chicken, tender potatoes, and crisp green beans all roasted together in a garlicky herb butter sauce.


🍗 One-Pan Garlic Herb Chicken with Potatoes & Green Beans

⭐ Ingredients (Serves 4):

  • 4 boneless, skinless chicken breasts (or thighs)

  • 1 lb (450 g) baby potatoes, halved

  • 8 oz (225 g) green beans, trimmed

  • 3 tbsp olive oil or melted butter

  • 4 cloves garlic, minced

  • 1 tsp dried Italian herbs (or a mix of thyme, oregano, basil)

  • 1 tsp paprika (optional, for color)

  • Salt & black pepper, to taste

  • Juice of ½ lemon (optional)

  • Fresh parsley or grated Parmesan, for garnish (optional)


🧑‍🍳 Instructions:

1. Prep the Oven:

  • Preheat oven to 400°F (200°C).

  • Line a large baking sheet or roasting pan with parchment paper or lightly grease it.

2. Prepare the Marinade/Sauce:

  • In a small bowl, mix olive oil (or butter), minced garlic, herbs, paprika, salt, and pepper.

3. Assemble the Pan:

  • Place chicken breasts in the center of the pan.

  • Arrange halved potatoes around one side, green beans on the other.

  • Drizzle the garlic herb mixture over everything. Toss potatoes and green beans to coat evenly.

  • Optional: Squeeze lemon juice over the whole pan for brightness.

4. Roast:

  • Bake for 25–30 minutes, flipping potatoes halfway through, until:

    • Chicken is cooked through (internal temp of 165°F / 74°C)

    • Potatoes are golden and fork-tender

    • Green beans are crisp-tender

5. Serve:

  • Garnish with chopped parsley or a sprinkle of Parmesan.

  • Serve directly from the pan for easy cleanup and rustic charm!


🔁 Variations:

  • Add cherry tomatoes in the last 10 minutes for a juicy pop.

  • Use bone-in chicken thighs for even more flavor (increase bake time by 5–10 min).

  • Try sweet potatoes or broccoli if you want to mix up the veggies.
