Ingredients:

  • 16 oz cream cheese (softened)
  • 1 cup powdered sugar
  • 1 tsp vanilla extract
  • 2 cups heavy cream (whipped to stiff peaks)
  • 1 tbsp lemon juice (optional, for a slight tang)

For the Topping:

  • 1 cup canned cherry pie filling (or fresh fruit of your choice, like strawberries or blueberries)
  • Optional: additional whipped cream for garnish

Instructions:

  1. Make the Crust:
    • In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until everything is evenly coated and the mixture resembles wet sand.
    • Press the graham cracker mixture into the bottom of a 9-inch springform pan or pie dish. Use the back of a spoon to pack it down firmly. For an extra crunch, you can press the mixture slightly up the sides of the pan.
    • Refrigerate the crust while you prepare the filling (about 30 minutes) to let it firm up.
  2. Make the Cheesecake Filling:
    • In a large mixing bowl, beat the softened cream cheese until smooth using a hand mixer or stand mixer. Add the powdered sugar and vanilla extract, and beat again until well combined.
    • In a separate bowl, whip the heavy cream to stiff peaks (you can use a hand mixer or stand mixer for this).
    • Gently fold the whipped cream into the cream cheese mixture until fully combined and smooth. If you like a tangy flavor, add the lemon juice and mix in.
  3. Assemble the Cheesecake:
    • Pour the cheesecake filling into the prepared graham cracker crust, smoothing the top with a spatula.
    • Refrigerate the cheesecake for at least 4 hours, or overnight, until it is fully set and firm to the touch.
  4. Add the Topping:
    • Once the cheesecake is set, top it with the cherry pie filling (or your choice of fruit topping). You can also add extra whipped cream if you like a creamier finish.
  5. Serve:
    • Slice the cheesecake into wedges and serve cold. You can add a drizzle of chocolate syrup or extra fruit for added flavor and decoration.
