No-Bake Chocolate Oat Bars

Yesss!  These No-Bake Chocolate Oat Bars are rich, chewy, and super easy to whip up—no oven, just pantry staples and a little chill time. Perfect for a snack, dessert, or even breakfast if you’re feeling fun.


 No-Bake Chocolate Oat Bars

Ingredients:

  • 1 cup butter (or coconut oil for dairy-free)

  • 1/2 cup brown sugar or honey

  • 1 tsp vanilla extract

  • 3 cups rolled oats

  • 1 cup semi-sweet chocolate chips

  • 1/2 cup peanut butter (or almond/sunflower butter)


Instructions:

  1. Melt & mix base:
    In a saucepan over medium heat, melt butter and stir in brown sugar and vanilla. Mix until smooth.

  2. Add oats:
    Stir in the oats and cook for 2–3 minutes, just to coat and slightly toast. Remove from heat.

  3. Press the base:
    Press half the oat mixture into a lined 8×8 or 9×9 pan. Press it down firmly to form a solid base.

  4. Melt chocolate layer:
    In a microwave-safe bowl, melt chocolate chips and peanut butter together in 20–30 second bursts, stirring until smooth.

  5. Assemble:
    Pour the chocolate mixture over the oat base and spread evenly. Top with the remaining oat mixture—press gently.

  6. Chill:
    Refrigerate for at least 2 hours (or freeze for 30–45 mins) until firm. Cut into bars and enjoy!


Store in the fridge so they stay nice and firm. Want to add coconut, chia seeds, or a salty pretzel crunch?
