No bake Chocolate Eclair Cake

Posted on August 6, 2025
Yes! A No-Bake Chocolate Éclair Cake is an old-school favorite — simple, creamy, and always a hit at family gatherings. If this is like your grandma’s version, here’s a classic recipe you might recognize:

No-Bake Chocolate Éclair Cake

Just like Grandma made — cool, creamy, and full of nostalgia.

Ingredients:

For the Cake Layers:

  • 1 box (14–16 oz) graham crackers (regular honey flavor)

  • 2 packages (3.4 oz each) instant vanilla pudding mix

  • 3 cups cold milk

  • 1 container (8 oz) Cool Whip or whipped topping (thawed)

For the Chocolate Topping:

  • 1 tub (16 oz) chocolate frosting (store-bought)
OR make your own (see homemade ganache version below)

Instructions:

Step 1: Make the Cream Filling

  1. In a large bowl, whisk together pudding mix and cold milk for about 2 minutes until thick.

  2. Fold in the thawed Cool Whip gently until well combined. Set aside.

Step 2: Layer the Dessert

  1. In a 9×13-inch dish, lay down a single layer of graham crackers (breaking pieces as needed to cover the bottom).

  2. Spread half of the pudding mixture over the crackers.

  3. Add another full layer of graham crackers.

  4. Spread the remaining pudding mixture on top.

  5. Finish with a final layer of graham crackers.

Step 3: Add the Chocolate Topping

  1. Microwave the tub of chocolate frosting (lid removed) for about 20–30 seconds until it’s pourable.

  2. Pour the frosting over the top layer of graham crackers and spread it evenly.

Step 4: Chill

  • Cover and refrigerate at least 6 hours, or overnight for best texture. The graham crackers will soften into a cake-like texture.

Optional: Homemade Chocolate Ganache Topping

If you want to make your own (and it’s super easy):

Ganache Ingredients:

  • ½ cup heavy cream

  • 1 cup semi-sweet chocolate chips

Instructions:

  1. Heat cream in a saucepan until just about to boil.

  2. Pour over chocolate chips in a bowl and let sit for 2 minutes.

  3. Stir until smooth and glossy, then pour over cake.

Serving Tip:

Slice into squares and serve chilled. It keeps well in the fridge for several days — and might be even better on day two!

Would you like me to tweak it to match how your grandma made it?
Let me know:

  • Did she use homemade pudding or a different flavor?

  • Was the topping homemade or canned?

  • Any special touch — like sprinkles, nuts, or a drizzle?

I can personalize it for you.
