Absolutely! Here’s the full recipe for the No-Bake Chocolate Éclair Cake, a cool, creamy, and decadent dessert that tastes just like a classic chocolate éclair — but in cake form. No oven required!


🍫 No-Bake Chocolate Éclair Cake

📦 Ingredients:

  • 1 box (14.4 oz) graham crackers (about 1½ sleeves)

  • 2 packages (3.4 oz each) instant vanilla pudding mix

  • 2½ cups cold milk

  • 1 tub (8 oz) whipped topping (like Cool Whip), thawed

  • 1 tub (16 oz) chocolate frosting
    (or see homemade ganache option below)


🥣 Instructions:

  1. Make the Filling:
    In a large bowl, whisk together the pudding mix and milk for 2 minutes until thickened. Gently fold in the whipped topping until fully combined and creamy.

  2. Layer the Graham Crackers:
    In a 9×13″ baking dish, place a single layer of graham crackers, breaking them as needed to cover the bottom completely.

  3. Add the Pudding Mixture:
    Spread half of the pudding mixture evenly over the crackers.

  4. Repeat Layers:
    Add another layer of graham crackers, then the rest of the pudding mixture, and top with a final layer of graham crackers.

  5. Frost the Top:
    Microwave the chocolate frosting for about 15 seconds to make it easier to spread, then evenly spread it over the top layer of graham crackers.

  6. Chill:
    Cover and refrigerate for at least 6 hours, or preferably overnight. This softens the graham crackers and turns the layers into a cake-like texture.

  7. Serve:
    Slice into squares and serve cold. Store leftovers in the fridge.


🍫 Optional Homemade Chocolate Ganache Topping:

If you’d prefer a richer, smoother chocolate topping:

Ingredients:

  • 1 cup semi-sweet chocolate chips

  • ½ cup heavy cream

Instructions:

  1. Heat the cream in a small saucepan or microwave until hot (just before boiling).

  2. Pour over the chocolate chips in a bowl.

  3. Let sit for 2 minutes, then stir until smooth and glossy.

  4. Let it cool slightly before spreading over the top layer.


🔄 Flavor Variations:

  • Chocolate pudding instead of vanilla = double chocolate delight

  • Add a layer of sliced bananas or strawberries between pudding layers

  • Use chocolate graham crackers for extra richness

  • Add a dash of espresso powder to the pudding for mocha flavor
