Absolutely! The No-Bake Chocolate Éclair Cake is a beloved, super-simple dessert that tastes like a fancy éclair but requires no oven — just layers of graham crackers, creamy vanilla pudding, and a rich chocolate topping. It’s perfect for parties, holidays, or a sweet weeknight treat.

📝 Ingredients:

For the cake:

  • 1 box (14.4 oz) graham crackers (you’ll need about 3 sleeves)

  • 2 boxes (3.4 oz each) instant vanilla pudding mix

  • 3 cups cold milk

  • 1 container (8 oz) whipped topping (like Cool Whip), thawed

For the chocolate topping:

  • 1/2 cup unsweetened cocoa powder

  • 1/2 cup milk

  • 1 cup granulated sugar

  • 1/4 cup (half stick) unsalted butter

  • 1 tsp vanilla extract

Or use 1 can of chocolate frosting as a shortcut!


🥣 Instructions:

1. Make the Filling:

  • In a large bowl, whisk together the pudding mixes and 3 cups cold milk until thick (about 2 minutes).

  • Fold in the whipped topping until fully combined and smooth.


2. Assemble the Layers:

  • In a 9×13-inch baking dish, lay a single layer of graham crackers on the bottom (break them to fit as needed).

  • Spread half of the pudding mixture over the crackers.

  • Add another layer of graham crackers.

  • Spread the remaining pudding mixture on top.

  • Finish with a final layer of graham crackers.


3. Make the Chocolate Topping:

  • In a small saucepan, combine cocoa powder, milk, sugar, and butter.

  • Bring to a boil over medium heat, stirring constantly.

  • Boil for 1 minute, then remove from heat and stir in vanilla.

  • Cool for about 5–10 minutes, then pour over the top layer of graham crackers.

Shortcut option: Microwave a can of chocolate frosting for 15–20 seconds, stir, and spread it over the top instead.


4. Chill:

  • Cover and refrigerate for at least 6 hours, preferably overnight. This allows the graham crackers to soften into a cake-like texture.


🍽️ Serve:

  • Slice into squares and serve chilled.

  • Optional: top with extra whipped cream, shaved chocolate, or a sprinkle of crushed graham crackers.
