No-Bake Chocolate Eclair Cake

You’re going to love this one! No-Bake Chocolate Éclair Cake is an easy, crowd-pleasing dessert that tastes like a creamy, dreamy éclair — but with zero baking involved. Layers of graham crackers, vanilla pudding, and whipped topping are topped with a rich chocolate ganache or frosting. Perfect for parties, potlucks, or when you want a make-ahead treat!

🧾 Ingredients

For the Cake:

  • 1 box (14.4 oz) graham crackers

  • 2 boxes (3.4 oz each) instant vanilla pudding mix

  • 3 cups cold milk

  • 1 tub (8 oz) Cool Whip or whipped topping (thawed)

For the Chocolate Topping (Ganache-style):

  • 1/2 cup heavy cream

  • 1 cup semi-sweet chocolate chips

Shortcut Option: Use 1 tub of store-bought chocolate frosting (microwave for 10–15 seconds to soften)


👨‍🍳 Instructions

1. Make the Filling

  • In a large bowl, whisk together instant pudding mix and cold milk for about 2 minutes until thickened.

  • Gently fold in the Cool Whip until fully combined. Set aside.

2. Layer the Cake

  • In a 9×13″ pan, place a single layer of graham crackers on the bottom (you may need to break some to fit).

  • Spread half the pudding mixture evenly over the crackers.

  • Add another layer of graham crackers.

  • Spread the remaining pudding mixture over that.

  • Finish with a final layer of graham crackers on top.

3. Make the Chocolate Ganache

  • Heat heavy cream in a small saucepan or microwave until just simmering (not boiling).

  • Pour over chocolate chips in a bowl. Let sit 2–3 minutes, then stir until smooth and glossy.

4. Top the Cake

  • Pour chocolate ganache over the top graham cracker layer.

  • Use a spatula to spread evenly.

5. Chill

  • Cover and refrigerate for at least 6 hours (or overnight) so the graham crackers soften into a cake-like texture.


🍽️ To Serve:

  • Slice into squares and serve chilled.

  • Optional: top with chocolate shavings or drizzle with caramel for extra flair.

  • Want chocolate filling too? Use chocolate pudding or mix one box vanilla + one chocolate.

  • Add sliced bananas or strawberries between layers for a fruity twist.

  • Keeps well in the fridge for up to 4 days — great for making ahead!
