Posted on January 29, 2025

Here’s a No-Bake Cherry Cheesecake Dessert recipe that’s super easy, creamy, and perfect for any occasion. It has a delicious graham cracker crust, a smooth and tangy cheesecake filling, and is topped with sweet, juicy cherry pie filling.

No-Bake Cherry Cheesecake Dessert Recipe

Ingredients:

For the Crust:

  • 1 1/2 cups graham cracker crumbs (about 10 graham crackers)
  • 1/4 cup sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Filling:

  • 2 packages (8 oz each) cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy whipping cream (chilled)

For the Topping:

  • 1 can (21 oz) cherry pie filling (or fresh cherries if you prefer)

Instructions:

1. Prepare the Crust:

  • In a medium bowl, mix the graham cracker crumbs, sugar, and melted butter until well combined. The mixture should hold together when pressed.
  • Press the mixture into the bottom of a 9×9-inch (or 9-inch round) baking dish, tart pan, or pie dish to form an even crust.
  • Refrigerate the crust while you prepare the filling, allowing it to firm up (about 10 minutes).

2. Make the Cheesecake Filling:

  • In a large mixing bowl, beat the softened cream cheese with an electric mixer until smooth and creamy.
  • Add the powdered sugar and vanilla extract, and continue beating until well combined.
  • In a separate chilled bowl, whip the heavy cream until stiff peaks form.
  • Gently fold the whipped cream into the cream cheese mixture until smooth and fully incorporated. Be careful not to deflate the whipped cream too much.

3. Assemble the Dessert:

  • Once the crust has chilled and firmed up, spread the cheesecake filling evenly over the crust.
  • Smooth the top with a spatula to make it as even as possible.

4. Top with Cherry Filling:

  • Spoon the cherry pie filling (or fresh cherries) evenly over the top of the cheesecake layer.
  • You can add as little or as much topping as you like, depending on your preference.

5. Chill and Serve:

  • Refrigerate the cheesecake for at least 4 hours, or preferably overnight, to allow it to set and firm up.
  • When ready to serve, slice and enjoy the creamy, sweet layers.

Tips:

  • Custom Toppings: You can swap the cherry topping with other fruits like blueberries, strawberries, or raspberries. Fresh fruit or fruit compotes work well too!
  • Make it a bit more indulgent: For extra richness, you can add a few tablespoons of sour cream to the filling or drizzle some chocolate or caramel sauce on top.
  • Crust variations: If you prefer a different crust, you can use digestive biscuits, vanilla wafer cookies, or chocolate cookies as a base instead of graham crackers.

This No-Bake Cherry Cheesecake Dessert is a simple, yet indulgent treat. It’s the perfect make-ahead dessert for gatherings or family dinners. Enjoy the creamy, tangy filling paired with the sweet cherry topping!
