New York Cheesecake

Here’s a classic New York cheesecake recipe — rich, dense, creamy, and perfect for any occasion.


🍰 Classic New York Cheesecake Recipe

🕒 Total Time: ~6 hours (includes chilling)

🧾 Ingredients

Crust:

  • 1 ½ cups (150g) graham cracker crumbs

  • 2 tbsp sugar

  • 6 tbsp (85g) melted butter

Filling:

  • 4 (8 oz) blocks cream cheese, softened (total 32 oz / 900g)

  • 1 ¼ cups granulated sugar

  • 1 cup sour cream

  • 1 tsp vanilla extract

  • 4 large eggs

  • 2 tbsp all-purpose flour

  • 1/4 cup heavy cream

Optional Topping:

  • Fresh berries, whipped cream, or fruit compote


👨‍🍳 Instructions

1. Make the Crust:

  1. Preheat oven to 325°F (163°C).

  2. Mix graham cracker crumbs, sugar, and melted butter in a bowl.

  3. Press mixture firmly into the bottom of a 9-inch springform pan.

  4. Bake for 10 minutes. Set aside to cool slightly.

2. Make the Filling:

  1. Beat cream cheese until smooth (use a stand or hand mixer on medium speed).

  2. Add sugar and mix until combined.

  3. Add sour cream, vanilla, and flour. Mix until smooth.

  4. Add eggs one at a time, mixing just until incorporated (don’t overmix).

  5. Stir in heavy cream last.

3. Assemble and Bake:

  1. Pour filling over the crust.

  2. Place springform pan in a water bath (wrap the bottom in foil and set it in a larger pan filled with 1 inch of hot water).

  3. Bake for 1 hour to 1 hour 10 minutes, until the center is almost set (still a bit wobbly in the middle).

  4. Turn off oven, crack the door, and let cheesecake sit inside for 1 hour.

4. Chill:

  • Remove from oven and refrigerate for at least 4 hours or overnight.

  • Use room temperature ingredients for a smooth texture.

  • Don’t overmix the batter to avoid air bubbles (which cause cracks).

  • A water bath helps with even baking and prevents cracking.
