New Mexico Green Chile Bisquick Quiche

Here’s a flavorful, New Mexico–inspired Green Chile Bisquick Quiche recipe — combining bold Hatch green chile flavor, creamy eggs, and a Bisquick-based “magic crust” that forms as it bakes. No need for a separate pie crust!


🌶️ New Mexico Green Chile Bisquick Quiche

🧾 Ingredients:

  • 4 large eggs

  • 1 cup milk (whole or 2% preferred)

  • 1/2 cup Bisquick (or your favorite baking mix)

  • 1/2 tsp salt

  • 1/4 tsp black pepper

  • 1/2 cup diced green chile (preferably Hatch, roasted and peeled)

  • 1 cup shredded cheese (cheddar, pepper jack, or a mix)

  • 1/2 cup cooked crumbled bacon, breakfast sausage, or chopped ham (optional)

  • 1/4 cup chopped onion (optional, sautéed for milder flavor)


👩‍🍳 Instructions:

  1. Preheat oven to 375°F (190°C).

  2. Grease a 9-inch pie dish or deep-dish pan.

  3. In a mixing bowl, whisk together eggs, milk, Bisquick, salt, and pepper until smooth.

  4. Stir in:

    • Green chile

    • Cheese

    • Cooked meat (if using)

    • Onion (if using)

  5. Pour mixture into the prepared pie dish.

  6. Bake for 35–40 minutes, or until the center is set and the top is lightly golden.

    • A toothpick inserted in the center should come out clean.

  7. Let cool for 5–10 minutes before slicing.

Ingredient Swap/Note
Cheese Try asadero, Monterey Jack, or feta for a twist
Spice it up Add a pinch of cayenne or diced jalapeños
Vegetarian Skip the meat, and add mushrooms, spinach, or zucchini
Gluten-free Use Gluten-Free Bisquick or a similar GF mix

🧊 Storage:

  • Store leftovers in the fridge up to 4 days.

  • Reheat in oven or microwave.

  • Can be frozen for 1–2 months (wrap slices individually).
