Easy AF Lasagne Pie Recipe

Ingredients:

  • 1 lb ground beef (or Italian sausage, or a mix of both)
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 jar (24 oz) marinara sauce (or your favorite pasta sauce)
  • 1 package (8 oz) lasagna noodles
  • 1 1/2 cups ricotta cheese (or cottage cheese if you prefer)
  • 1 egg
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • Salt and pepper to taste
  • Olive oil (for greasing the pan)

Instructions:

  1. Cook the Noodles:
    • Preheat your oven to 375°F (190°C).
    • Cook the lasagna noodles according to package instructions. Drain, rinse with cold water, and set aside.
  2. Prepare the Meat Sauce:
    • In a large skillet, heat a little olive oil over medium heat. Add the ground beef (or sausage), and cook until browned. Break it apart as it cooks.
    • Once the meat is browned, add the chopped onion and minced garlic. Cook for another 2-3 minutes until softened.
    • Pour in the marinara sauce, and season with basil, oregano, salt, and pepper. Let the sauce simmer for 10-15 minutes, stirring occasionally.
  3. Make the Cheese Mixture:
    • In a bowl, combine the ricotta cheese, egg, 1 cup of mozzarella cheese, and grated Parmesan. Stir until well mixed and season with a pinch of salt and pepper.
  4. Assemble the Lasagna Pie:
    • Grease a 9-inch pie dish or deep-dish pan with olive oil.
    • Lay 2-3 lasagna noodles in the bottom of the dish, breaking them to fit as needed.
    • Spread half of the cheese mixture over the noodles.
    • Layer half of the meat sauce on top of the cheese mixture.
    • Repeat with another layer of noodles, cheese mixture, and sauce.
  5. Top It Off:
    • Finish with a final layer of noodles, the remaining sauce, and top with the remaining mozzarella cheese.
  6. Bake:
    • Cover the dish with aluminum foil and bake for 25-30 minutes. After 25 minutes, remove the foil and bake for another 10 minutes, or until the cheese is melted and bubbly.
  7. Serve:
    • Let the lasagna pie rest for about 5 minutes before slicing and serving. Garnish with fresh basil or parsley if desired.

Tips:

  • Make it Veggie-Friendly: Add a layer of spinach or mushrooms to the cheese or sauce mixture for extra veggies.
  • Use Store-bought Sauce: For a true “Easy AF” vibe, go with a good-quality jarred marinara sauce.
  • Leftovers: This lasagna pie makes for great leftovers! It holds up well in the fridge and reheats easily.
