Posted on August 31, 2025
Here’s a comforting and flavorful recipe for Monterey Sausage Pie — a cheesy, hearty dish loaded with sausage, eggs, and green chiles, all baked into a savory pie. Perfect for brunch, dinner, or potlucks!

🥧🧀 Monterey Sausage Pie

🧾 Ingredients:

  • 1 lb breakfast sausage (pork or turkey), crumbled

  • 1 small onion, chopped

  • 1 ½ cups shredded Monterey Jack cheese (or pepper jack for spice)

  • 1 (4 oz) can diced green chiles, drained

  • 1/2 cup Bisquick or other baking mix

  • 1 cup milk

  • 3 large eggs

  • Salt and pepper, to taste

🔧 Instructions:

  1. Preheat oven:

    • Preheat to 400°F (200°C). Grease a 9-inch pie dish.

  2. Cook sausage mixture:

    • In a skillet, cook sausage and onion over medium heat until sausage is browned and onion is tender. Drain excess fat.

  3. Assemble in pie dish:

    • Spread cooked sausage and onion evenly in the prepared pie dish.

    • Sprinkle with shredded cheese and green chiles.

  4. Mix the batter:

    • In a medium bowl, whisk together Bisquick, milk, eggs, salt, and pepper until smooth.

  5. Pour & bake:

    • Pour the batter over the sausage and cheese.

    • Bake for 25–30 minutes, or until the center is set and top is lightly golden.

  6. Cool slightly & serve:

    • Let rest 5–10 minutes before slicing.

    • Serve warm with salsa, sour cream, or a simple green salad.

📝 Tips:

  • Make it spicy: Use hot sausage or pepper jack cheese.

  • Add-ins: Try chopped spinach, diced bell pepper, or mushrooms.

  • Make ahead: Can be assembled and refrigerated overnight before baking.
