Mojo Potatoes

Here’s a delicious and easy recipe for Mojo Potatoes — crispy, seasoned potato wedges made famous by fast food joints and casual diners (like Shakey’s Pizza). They’re golden on the outside, tender inside, and loaded with bold, garlicky flavor.


🥔 Crispy Mojo Potatoes

👥 Serves: 4–6

🧾 Ingredients:

  • 4 medium russet potatoes, scrubbed and cut into thick rounds (about 1/4″ to 1/3″ thick)

  • 1 cup all-purpose flour

  • 1 tbsp garlic powder

  • 1 tsp paprika

  • 1 tsp onion powder

  • 1/2 tsp dried oregano

  • 1/2 tsp salt (or to taste)

  • 1/2 tsp black pepper

  • 1 cup buttermilk (or 1 cup milk + 1 tbsp lemon juice)

  • Vegetable oil, for frying (if frying)


🔥 Instructions:

1. Prep the potatoes:

  • Wash and slice potatoes into thick rounds, like thick coins.

  • Optional: Soak in cold water for 30 minutes to remove excess starch (helps them get crispier). Pat dry thoroughly.

2. Set up breading station:

  • In one bowl: Mix buttermilk (or milk + lemon juice).

  • In another bowl: Combine flour, garlic powder, paprika, onion powder, oregano, salt, and pepper.

3. Coat the potatoes:

  • Dip each potato slice in buttermilk, then dredge in the seasoned flour.

  • For extra crispiness, double dip: repeat the process for a thicker coating.


🛢️ Option 1: Deep-Fry (Classic Style)

  • Heat oil in a deep skillet or fryer to 350°F (175°C).

  • Fry the potatoes in batches for 4–5 minutes per side, or until golden brown and cooked through.

  • Drain on paper towels. Sprinkle lightly with salt while hot.


🔥 Option 2: Oven-Baked

  • Preheat oven to 425°F (220°C).

  • Arrange breaded potato slices on a parchment-lined baking sheet.

  • Spray generously with cooking spray or lightly brush with oil.

  • Bake for 25–30 minutes, flipping halfway, until golden and crisp.


🍃 Option 3: Air Fryer

  • Preheat air fryer to 400°F (200°C).

  • Lightly oil or spray coated potatoes.

  • Cook in a single layer for 15–20 minutes, flipping once halfway.


🥣 Dipping Sauce Ideas:

Classic Garlic Mayo Dip:

  • 1/4 cup mayo

  • 1 tbsp sour cream

  • 1 clove garlic, minced

  • 1 tsp lemon juice

  • Salt to taste

Ranch or Honey Mustard also pair great!


💡 Tips:

  • Use russet potatoes for best results — they crisp up better.

  • Want more heat? Add cayenne or chili powder to the flour mix.

  • These are best served immediately while hot and crispy.
