Moist Chocolate Loaf Cake Recipe

Ingredients:

  • 1 3/4 cups all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 3/4 cup unsweetened cocoa powder
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup whole milk (or buttermilk for extra richness)
  • 1/2 cup boiling water
  • 1/2 cup sour cream (for extra moisture)
  • 1/2 cup semi-sweet chocolate chips or chunks (optional)

Instructions:

  1. Preheat and Prepare the Pan:
    • Preheat your oven to 350°F (175°C).
    • Grease and line a 9×5-inch loaf pan with parchment paper, or simply grease and flour the pan.
  2. Mix the Dry Ingredients:
    • In a medium bowl, whisk together the flour, baking powder, baking soda, salt, and cocoa powder. Set aside.
  3. Cream Butter and Sugar:
    • In a large bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
    • Add the eggs, one at a time, beating well after each addition. Then add the vanilla extract and mix until combined.
  4. Add Wet Ingredients:
    • Gradually add the dry ingredients to the wet mixture in batches, alternating with the milk and sour cream. Start and end with the dry ingredients. Mix until just combined.
    • After the batter is mixed, stir in the boiling water. This will make the batter very thin, but that’s what helps create the moist texture!
    • If using chocolate chips or chunks, fold them into the batter at this stage.
  5. Bake:
    • Pour the batter into the prepared loaf pan, smoothing the top with a spatula.
    • Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs.
    • If the cake is browning too quickly, you can cover it loosely with aluminum foil for the last 10-15 minutes of baking.
  6. Cool and Serve:
    • Let the cake cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
    • Once cooled, slice the cake and serve. You can also dust it with powdered sugar or drizzle it with a simple chocolate glaze for an extra indulgent touch.
