🐚 Creamy Mixed Seafood Soup

🧄 Ingredients:

Seafood:

  • 1 lb mixed seafood, such as:

    • Shrimp (peeled & deveined)

    • Scallops

    • White fish (like cod or haddock), cubed

    • Mussels or clams (optional)

  • 1 tbsp lemon juice (optional, for marinating)

Base:

  • 2 tbsp butter

  • 1 tbsp olive oil

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 1 celery stalk, diced

  • 1 carrot, diced

  • 2 tbsp flour (for thickening)

Liquid:

  • 3 cups seafood stock (or fish/chicken broth)

  • 1 cup heavy cream (or half-and-half)

  • ½ cup dry white wine (optional, can sub with broth)

  • Salt & pepper, to taste

  • ½ tsp Old Bay seasoning (or paprika + celery salt)

  • ¼ tsp dried thyme or dill

  • Pinch of cayenne or chili flakes (optional, for heat)

Garnish:

  • Fresh parsley, chopped

  • Lemon wedges

  • Crusty bread or garlic toast, for serving


👩‍🍳 Instructions:

1. (Optional) Prep the Seafood

  • If using frozen seafood, thaw and pat dry.

  • Toss with a bit of lemon juice, salt, and pepper. Let sit while you start the soup.

2. Sauté the Base

  • In a large pot or Dutch oven, heat butter and olive oil over medium heat.

  • Add onion, celery, and carrot. Sauté until soft, about 5–7 minutes.

  • Add garlic and cook 30 seconds more.

3. Make the Roux

  • Sprinkle in the flour. Stir constantly for 1–2 minutes to cook out the raw taste.

  • Slowly add the white wine (if using), stirring to deglaze the pot.

4. Add Liquids

  • Gradually pour in the seafood stock while stirring.

  • Bring to a gentle simmer and cook 10–15 minutes to allow flavors to blend.

5. Add Cream & Seasoning

  • Stir in the cream.

  • Season with salt, pepper, thyme, and Old Bay seasoning.

  • Simmer gently (don’t boil) for 5–10 minutes.

6. Add the Seafood

  • Add the seafood and simmer for 5–8 minutes, or until:

    • Shrimp turn pink

    • Fish flakes easily

    • Scallops are opaque

    • Shellfish open (discard any that don’t)

7. Finish & Serve

  • Taste and adjust seasoning.

  • Garnish with parsley and serve with lemon wedges and crusty bread.

  • Add a handful of corn kernels or diced potatoes for more body.

  • Stir in a spoonful of cream cheese for extra richness.

  • Add a splash of hot sauce or smoked paprika for depth.
