Instructions:

Prep the onions:

Peel and slice the onion into thin rings.

Separate them into small rings (use the inner pieces for “mini” size).

Set up your coating station:

In one bowl: place almond flour or pork rinds, seasoned with salt, pepper, and optional spices.

In another bowl: beaten egg.

In a third bowl: shredded cheese.

Coat the onion rings:

Dip each ring into the egg, then roll in cheese, gently pressing it in.
